Domaine Robert Chevillon Nuits Saint-Georges 1er Cru Les Cailles 2011 奇維龍酒莊一級園《風土系酒款 - TF585A》

Domaine Robert Chevillon 是 Nuits Saint-Georges 最出色的酒莊之一，與 Henri Gouges, Thibault Liger-Belair 是本地的三大酒莊。始於 Chevillon 家族自20世紀初便開始栽種葡萄，而後家族不斷發展陸續購入葡萄園。到了1968年，第三代 Maurice 的兒子 Robert 退伍之後，父子倆一共照料葡萄園，但並不是自己裝瓶，而是賣給酒商，直到 Robert 正式接管酒莊後，以其名字命名酒莊，開始自己裝瓶，逐步提升酒的品質，使得 Domaine Robert Chevillon 成為了村內的頂級名莊之一。2003年老莊主退休之後由其兩個兒子 Denis & Bertrand 正是接管酒莊，二人分別負責負責葡萄園管理和釀酒。如今旗下葡萄園總面積13公頃，除了1.67公頃的大區級葡萄園，其餘全部都在 Nuits Saint Georges 產區，其中有八塊是 Premier Cru 一級園，Les Saint Georges, Les Vaucrains, Les Cailles 三片經典名園的老藤佳釀成為了酒莊的標杆作品，完整呈現產區的特色。

葡萄園 Les Cailles 位於 Nuit-Saint-Georges 南部，雖然產區內沒有特級園，但與曾被提名最有可能晉升為 Grand Cru 特級園的 Les Saint-Georges 為鄰，與 Les Vaucrains 一併被稱為 Nuit-Saint-Georges 最好的一級葡萄園，而且樹齡都超過80年上，是三者之中最為優雅細緻。Les Cailles 朝向東面，海拔250-260米，1.2公頃，由粉色和白色的石灰岩組成，排水性極好，土壤肥力不高，非常適合種植黑皮諾，葡萄園合適的傾斜度讓葡萄沐浴著早上的陽光，同時受 Cote d'Or 山頂冷空氣的影響減緩成熟過程，讓酸度與風味融合得更完美。

為了選擇最佳收穫時期，酒莊每週進行兩次葡萄成熟度檢查，Denis 認為提早干預葡萄生長發育和精細化管理，有助於提高葡萄品質，他借助現代葡萄園管理的一些手法，在7月進行 “Green Harvest”，通過犧牲產量來提高果實的集中度和成熟度，葡萄人手採摘，果實經碎皮後首先經過5-6天的低溫浸漬，然發酵2-3周，再完成蘋果酸乳酸發酵後在30%新的橡木桶內陳釀15-18個月，利用重力引流轉移葡萄酒裝瓶。名副其實一級園價錢特級園享受！

Tasted blind at the Burgundy 2011 horizontal tasting in Beaune. The Nuits Saint Georges 1er Cru Les Cailles 2011 offers quite prominent and luscious (for the vintage) fruit on the nose with generous oak, however it is deftly integrated with the succulent, tart red cherry fruit. The palate is medium-bodied with supple tannins. Again, I find that the oak is a little conspicuous, though underneath there is plenty of candied red fruit interlaced with orange peel and tangerine on the feminine, lithe finish. Give this two or three years in bottle and you will have a pretty Nuits Saint Georges.
