Many people like French brandy, such as Hennessy, Remy Martin, and Martell, which are more well-known; usually, except for France, Spanish brandy is considered the best. Some Spanish brandies are made from Sherry, which first started at the end of the 19th century. The aging method of using Sherry to make Spanish brandy is very unique, and like the aging method of Sherry itself, it is called solera. As for French brandy, Spanish brandy is obviously sweeter and has an earthy flavor, so it is a very good choice!
Founded in 1730, FUNDADOR is the first winery in Spain to produce brandy. The sherry it produces is exclusively for the Queen of England. It has the world's largest sherry wine cellar warehouse and is also world-famous for the production of expensive "Sherry barrels".
Jerez, where the Fundador vineyard is located, has chalk soil (Albariza), which contains a large amount of calcium carbonate. Like a sponge, it can absorb rainwater and conserve the soil. Also, because it is close to the sea, the water vapor helps maintain air humidity and resist the heat. Dry easterly wind. The Airen and Palomino grapes used to make wine grow well in the unique soil of Jerez. Care is taken during harvesting to avoid damaging the fruit and good ventilation is maintained before sending for pressing. The pressed juice is fermented and transformed into white wine, which is then graded and sent to the solera system for the magical maturation process.
The ventilated wine cellar provides stable temperature and humidity, which is conducive to promoting the maturation of microorganisms in the wine barrels. The hops (flor del vino) covering the surface of the wine prevent direct contact with oxygen in the air and give the wine a unique flavor. The distillation process has been in place since the beginning, so it has not changed much so far, accurately maintaining the distillation quality of various brandies. Still using the most traditional "alquitara" wood-fired copper pot still, coupled with a continuous still.
Fundador brandy uses the "solera" system of sherry aging. The barrels are stacked upward according to the year. The oldest ones are placed near the bottom of the floor, which are called solera. The younger the barrels are, the younger ones are called criadera. When bottling, the bottom layer of wine is extracted and replenished with brandy from the upper layer of barrels. This system is unique to the Jerez region, blending young brandy with old brandy to energize the old wine.
