Hinch Distillery is located in the beautiful Killarney Manor south of Belfast, Northern Ireland. It was founded by entrepreneur Dr. Terry Cross in 2016 and was officially put into production in 2020. It mainly produces Irish whiskey and gin.

The name "Hinch" comes from the Irish word "Ballynahinch", which means "island town". County Down, where the distillery is located, is located in the northeastern province of Ulster on the island of Ireland, only 20 miles away from Scotland.

County Down has a distinguished history of whiskey making and is one of the most culturally diverse, beautiful and historic cities on the entire island of Ireland. In this land, the traditions, concepts, craftsmanship and humanistic consciousness of Ireland and Scotland blend with each other.

The Xinqi Distillery has absorbed and inherited the essence of both cultures. Inspired by the ebb and flow of the Irish Sea for centuries, the Xinqi Distillery was inspired by the precious distilling traditions left by its Gaelic ancestors and launched the Bold, innovative and stylish modern Irish whiskey.

The graphic in the center of the distillery’s logo represents the giant Irish elk that crossed the island of Ireland many centuries ago. This also symbolizes the distillery's expectations for itself - to keep moving forward with a brave and firm original intention and a bold and distinctive personality, adhering to such an unyielding and fearless spirit to become an innovative leader on the road to the renaissance of Irish whiskey.

The design concept of the distillery incorporates many bold and unique elements. While inheriting the classic Irish pot distillation techniques, it can also create modern Irish whiskey that highlights a unique personality.

The natural water source for making whiskey comes from the reservoir in the quiet valley of the magnificent Morne Mountains. This natural area on the Irish island has not been exploited by modern technology. The water quality is extremely pure, making it the most ideal water source for making whiskey.

Barley raw materials are selected from premium varieties with high amylase content from Ireland and Scotland. The distillery is equipped with two mash tanks to obtain richer wort, and uses the traditional Irish mashing process.

It is then distilled three times using the classic Irish whiskey pot distillation technique. The latest distillation equipment has been specially designed and improved to better handle the reflux link, allowing more time for the steam and the copper wall to interact to create a more recognizable flavor profile.

The whiskey produced has a rich and charming aroma, a fuller body, and a more mellow and smooth taste. It not only has the pleasant characteristics of classic Irish whiskey, but also always demonstrates the unique and bold personality of Xinqi Distillery.

Chief Distiller Aaron Flaherty has worked at Bushmills Distillery and whiskey distilleries in Scotland for many years, and has rich experience in whiskey production and superb blending skills.

The distillery currently has the largest number of high-aged whiskey single barrels in Ireland, and selects a large number of high-quality oak barrels to age the distilled new wine. It also has its own bottling line.

It is barreled in craft Stout beer barrels and bottled with a non-chill-filtered 46.4% alcohol concentration. It was matured in first-fill bourbon barrels and then moved to Stout beer barrels for 11 months. When drinking, you can clearly smell the aroma of hops, dark cocoa and heavily roasted coffee.
