🌟 DEMETER & BIODYVIN
Since 2000, Thierry Valette has owned this Castillon vineyard. Made with care, the wine established itself from the start as one of the appellation's most interesting vintages, with a deep and eminently racy style. The vineyard, now cultivated in biodynamics, confirms all hopes. The great wine, of classic style, stands out for its straight forwardness and density: this bottle made for the table ages remarkably well in the great years. In addition to the first wine, Thierry Valette offers three excellent cuvées, including two so-called thirst-quenching (Bistrot and Pervenche) which reconcile us with Bordeaux wines for quick consumption. It should be noted the consistency of the range and the desire to make both wines of immediate pleasure and wines of great depth.

Vineyards
3ha of leased vineyard situated on the limestone plateau of Sainte-Colombe. Vineyards managed as organic since 2012 and following the biodynamic way since 2019.
Harvest
By hands, on the 1st of September (Merlot) and the 15th of September (Cabernet Franc).
Vinification method
Transfer of whole grapes by gravity into inox vats. Low temperature fermentation (max 23°C), 10 days maceration, low strain extraction, light pressing.
Ageing
Ageing on lees in stainless steel vats for 5 months. No fining.
Bottling
7,300 bottles on the 16th of March 2021 on a “fruit” day.
