Martell is a famous cognac brandy produced in the Cognac region of France, and it is also the oldest top cognac distillery in the world. It is named after its founder. The young man "Jean Martell" from the Island of Jersey) was founded in 1715. In the 300 years of brand development, the brand has changed hands several times. Today, Martell Cognac is known all over the world for its high quality and mellow taste. For three centuries, Martell has created a set of original winemaking art and Martell's unique style due to its persistence in innovation, firm demand for perfection and independent personality.

The Martell family adheres to strict quality control in every step from viticulture, winemaking procedures, distillation process control, and cellar aging requirements, and uses a special secret recipe that is unique in the world to create Martell Cognac with a mellow taste and elegant taste. The unique characteristics ensure that the market position remains unshakable and will become stronger over time. It can be regarded as one of the most representative distilleries in cognac in terms of its long history, large production scale, and the degree of trust of gourmets. Terroir

 

Cognac is grown in the Charente region of France, near the Atlantic coast. The Cognac region itself is divided into six vineyard areas, or appellations. On this sunny white land, the mild maritime climate is most suitable for the growth of Eublanc grapes, which account for the majority of the region. The rich and multilayered character of this region gives Cognac its famous character: smooth, elegant, with notes of candied fruit, spice and flowers.

 

Yet. When Jean Martell founded the winery, he paid special attention to Borderies, which is the smallest and rarest grape-producing area in the Cognac region. The grapes grown on the silica clay soil of the marginal zone give the eaux-de-vie a unique floral aroma and a particularly smooth taste. This unique terroir provides the elegance and sophistication at the heart of the finest Martell cognacs.

Grapes matured in the Cognac area are turned into clear white wine, which is transformed into eaux-de-vie after being heated and boiled in copper stills. This is the process of distillation.

 

To ensure authentic taste, Martell heats the wine in traditional copper stills. As the boil progresses, the vapors rise to the top of the still, where they pass through the swan neck into the coils where they condense and form a clear, warm liquor. Among the many outstanding cognac wineries, only Martell distills clear wine after removing all sediments and impurities to produce extremely fine and pure eaux-de-vie, presenting pure grape fruit aroma.

 

Transforming a fruity wine into a perfect eaux-de-vie is a highly delicate job that requires the careful attention of the head distiller and his team, who must perfectly control the time and temperature of the distillation.

The eaux-de-vie sleep in the dark, quiet Martell cellar. Day after day, month after month, year after year. A wonderful transformation is taking place. Oak is alive, giving the eaux-de-vie body and beautiful amber color, and helping the eau-de-vie to release its unique aroma.

 

Martell insists on using only casks made of densely ringed oak, which has the unique character of giving the eaux-de-vie a soft, balanced aroma of vanilla, dried and red fruits, sweet and sour sauce and flowers.

Martell uses Tossé oak barrels. Tossey oaks grow closely together, and each sapling receives less sunlight, thus slowing down the growth rate and resulting in tighter rings. Casks made of this denser-ringed oak give the eaux-de-vie a softer, more delicate woody aroma.

 

In addition to the choice of oak, the type of cask used also greatly affects the flavor of the eaux-de-vie. If new casks are used, it will give the wine a strong woody aroma; if the casks have been aged for eaux-de-vie before, the woody aroma will be lighter. The link that finally creates the main taste element is "roasting"-toasting the inside of the barrel with a slow fire, so that the various aromas inside the oak can be released. The more toasted the barrel, the more intense the aroma it emits. At Martell, the casks are simmered to preserve the flavor of the eaux-de-vie.

About time... some eaux-de-vie mature for 2 years (the minimum aging period for cognac), some for 20 years, and some for 70 years. Whether the eaux-de-vie have reached their full potential rests with the keen eye of the Martell Cellar Master. When the eaux-de-vie are mature, they are removed from the oak barrels and poured into large glass bottles. The aging process ends here and the eaux-de-vie remain in perfect aging condition. At this moment, the rarest eaux-de-vie is still in storage. Some of the eaux-de-vie have been aged for a long time in the Martell cellar, waiting for the passage of time to produce cognacs that are rare in the world.

 

Each eaux-de-vie is unique due to the region of origin and the choice of aging process (such as the type of oak barrels used, the aging time). Like a note in a multi-layered symphony, the cellar master must know how to use and combine each note to produce a perfect harmony.

 

The blending process gives Cognac a unique and long bouquet. During the blending process, the cellar master needs to choose from many flavors and perfectly shape the body of each wine according to the original recipe. The task of the cellar master is further complicated by the fact that the eaux-de-vie naturally and slowly change from year to year due to climate and harvest.
