The Podere di Marcialla farm is located ona green Chianti hill, halfway between Florence and Siena and covers an area of28 hectares of which 13 are vineyards and 8 are olive groves. The recent andambitious project was begun in 2009 from the union of the Anichini andPassaponti families, who have been viticulturists for over 150 years in theterritories of Barberino val d’Elsa and Certaldo.
Today Silvio Anichini, Giovanni and MariaPia Passaponti run their farm with dedication and passion by utilising themethod of organic farming. This is an idea which was realised back in 1988thanks to Giovanni’s respect and love of his land. The farm’s philosophy of"eco-sustainability" is assiduously followed in every detail andtranslates into the daily search for the maximum expression of the terroirwhile fully respecting the environment and its biodiversity
Wine-making : The vinification of the grapes takes place in stainless tanks at a controlled temperature of about 25℃. The maceration has an average duration of 15 days during which the alcoholic fermentation is completed. Daily rimontagio ( pumping must over the grape pomace) and delestage ( rack and return process) are carried out aimed at a greatre extraction.
Maturation : 6 months cement tanks
Tasting note : Ruby red color with violet reflections. Intense aroma that express notes of red berry fruit such as raspberries and blackberry. Thick and ripe jam and tannin taste on the palate. Balanced and persistent finish.
Pairings: Fresh pasta, cold cuts, red and white meats
