Saburomaru Distillery in the Hokuriku region of Japan is one of the few distilleries in Japan dedicated solely to "peated whisky," like a solitary lamp illuminating the subtle, understated aroma of peat in the world of whisky. Since 1952, Saburomaru Distillery has been the core of Wakatsuru Brewery's whisky production, quietly preserving this unique flavor. Located within the Wakatsuru Brewery, founded in 1862 (Bunkyu 2), Saburomaru Distillery brews sake in winter and distills whisky in summer, making it the only whisky distillery in the Hokuriku region. Since 1952, it has been renowned for its distinctive smoky flavor. In 1953, the distillery launched its first whisky—"Sunshine Whisky" (サンシャインウイスキー), a very special Japanese whisky. Saburomaru hopes that this whisky, brewed with water, air, and sunshine, will allow Japan's whisky industry to rise again like the sun in Japan, symbolizing post-war reconstruction and peace.


Saburo Maru adheres to a tradition established since its inception: meticulously selecting local Toyama malt to create an authentic Scottish-style smoky whisky. The distillery uses malt from two sources—heavily peated (50ppm) Scottish malt and locally grown Toyama malt, blending Scottish and local flavors. The peat is specially imported from Islay, Scotland, imparting a unique smoky character and a maritime connotation.
Notably, Saburo Maru features a unique fermentation process: a fusion of brewer's yeast and whisky yeast, supplemented by a unique sake brewing technique to bring out fruity aromas. The distillery also collaborates with Toyama University on yeast research, aiming to develop a whisky with a distinctive Toyama flavor. Even the water is carefully selected; adhering to the philosophy that "good water makes good whisky," Saburo Maru uses water from the Shokawa River system, flowing over granite, resulting in exceptional clarity.
The distillery also places great importance on environmental development and sustainability. During whisky production, Saburomaru collaborates with local businesses to reduce grain loss and waste by using the malt residue and organic waste generated, which is then used as livestock feed. The distillery also actively collaborates with local forestry and carpentry firms, using local timber such as Mizunara wood from Toyama Prefecture to make barrels. This generates added value while also planting new broadleaf forests in the water source area.
