In 2018, to commemorate Wakatsuru Brewery's centennial, a series of commemorative whiskies were released, among which "Ten-Sen Akira" whisky shines like a brilliant pearl, radiating historical brilliance.

The name "Ten-Sen Akira" originates from a place near Saburomaru. There, golden rapeseed fields abound, producing high-quality rapeseed oil, which was the primary fuel for oil lamps in ancient times. This land, because its lamp oil illuminated countless homes, was called "Ten-Sen Akira," symbolizing light and hope. "Ten-Sen Akira" whisky inherits this meaning, hoping to warm everyone's heart like an oil lamp.

"Ten-Sen Akira" whisky is a blended whisky that combines heavily peated Scotch grain whisky with its own malt whisky. Using heavily peated Scotch grain whisky imparts a robust peaty character, while the addition of their own malt whisky brings a gentle, smoky, sweet malt aroma, creating a beautiful symphony. Wakatsuru Brewery's signature peated style is evident in "Ten-Year Akira," boasting exceptional balance, a smooth palate, and a long finish. Like a warm oil lamp, simple yet powerful, it illuminates the heart of the drinker.

"Ten-Year Akira" whisky, like an ancient legend, carries the weight of time and the spirit of craftsmanship. It is more than just a whisky; it is a gift, a tribute to history, and an expectation for the future. Each time you raise a glass and savor the rich aroma of "Ten-Year Akira," it's as if you've traveled back in time to an era of dim lighting, feeling the glow of oil lamps illuminating people's lives and the future.

This is a blended whisky with an elegant and distinct smoky character. The aroma, rich in sweet malt, might lead one to mistake it for a single malt whisky due to its high malt content. The peaty ash notes are pronounced on the palate. The finish is medium-bodied, with a smooth yet uncomplicated texture. Saburo Maru combines years of accumulated blending expertise with over 50% heavily peated malt whisky. The 10-year-old Rouge received a unanimous gold medal from the jury in the non-aged Japanese blended whisky category at the ISC2020 International Spirits Competition.

Distillery



Saburomaru Distillery in the Hokuriku region of Japan is one of the few distilleries in Japan dedicated solely to "peated whisky," like a solitary lamp illuminating the subtle, understated aroma of peat in the world of whisky. Since 1952, Saburomaru Distillery has been the core of Wakatsuru Brewery's whisky production, quietly preserving this unique flavor. Located within the Wakatsuru Brewery, founded in 1862 (Bunkyu 2), Saburomaru Distillery brews sake in winter and distills whisky in summer, making it the only whisky distillery in the Hokuriku region. Since 1952, it has been renowned for its distinctive smoky flavor. In 1953, the distillery launched its first whisky—"Sunshine Whisky" (サンシャインウイスキー), a very special Japanese whisky. Saburomaru hopes that this whisky, brewed with water, air, and sunshine, will allow Japan's whisky industry to rise again like the sun in Japan, symbolizing post-war reconstruction and peace.

Saburo Maru adheres to a tradition established since its inception: meticulously selecting local Toyama malt to create an authentic Scottish-style smoky whisky. The distillery uses malt from two sources—heavily peated (50ppm) Scottish malt and locally grown Toyama malt, blending Scottish and local flavors. The peat is specially imported from Islay, Scotland, imparting a unique smoky character and a maritime connotation.


Notably, Saburo Maru features a unique fermentation process: a fusion of brewer's yeast and whisky yeast, supplemented by a unique sake brewing technique to bring out fruity aromas. The distillery also collaborates with Toyama University on yeast research, aiming to develop a whisky with a distinctive Toyama flavor. Even the water is carefully selected; adhering to the philosophy that "good water makes good whisky," Saburo Maru uses water from the Shokawa River system, flowing over granite, resulting in exceptional clarity.


The distillery also places great importance on environmental development and sustainability. During whisky production, Saburomaru collaborates with local businesses to reduce grain loss and waste by using the malt residue and organic waste generated, which is then used as livestock feed. The distillery also actively collaborates with local forestry and carpentry firms, using local timber such as Mizunara wood from Toyama Prefecture to make barrels. This generates added value while also planting new broadleaf forests in the water source area.

Distillation


The ZEMON bronze still was developed in collaboration between Saburomaru Distillery and Laoji Works in Takaoka City. Takaoka City in Toyama Prefecture is known as the "Takaoka Copper Castle," with a history dating back to the Kaga feudal era, spanning over 400 years. Over 90% of Japan's bronze ware is naturally produced in castle towns, where excellent bronze-making techniques have been developed. Zemon's unique design earned it a Japanese patent in June 2022 (Patent No. 6721917) and a British patent in September of the same year (Registration No. GB2590218).

It boasts several key features:

High Quality and Long Lifespan: ZEMON stills are made of a copper-tin alloy, a material that not only extends the still's lifespan but also enhances the quality of the whisky.

Excellent Thermal Conductivity: The copper-tin alloy's excellent thermal conductivity allows for more even heating of the spirit, thus improving distillation efficiency.

Unique Surface Structure: The micro-uneven surface formed during the casting process increases the still's surface area, which helps enhance the reaction between the copper-tin alloy and the spirit, resulting in a smoother whisky.

Energy Saving: ZEMON stills have excellent heat retention, maintaining a stable distillation process while saving energy.

Combination of Traditional Technology and Modern Innovation: This still combines 400 years of copperware manufacturing techniques from Takaoka City with modern innovative processes, representing a perfect fusion of tradition and modern technology.

These characteristics give ZEMON stills a significant advantage in whisky making, enabling the production of whiskies with richer and fuller flavors.
