Stephan von Neipperg - 坐擁波爾多滿分一級莊的新派代表

有著招牌八字鬚，即使在最熱的時候也穿西裝打呔的 Stephan von Neipperg 現在已是 Bordeaux 甚至葡萄酒界的標誌人物。坐擁著 10 間酒莊，除了 8 間在 Bordeaux 外還在南非和保加利亞各有 1 間。最著名莫過於右岸兩間 1B 級莊 Canon La Gaffeliere 和 La Mondotte，後者更在 2009 年斬下 Robert Parker 親評 100 分滿分，有人說就是他引領了右岸的變革。

Stephan von Neipperg 在 1957 年出生在德國南部的一個 800 年釀酒世家，也就是 von Neipperg 家族的顯赫實力，造就了 Stephan 的釀酒機緣。von Neipperg 在十二世紀德國 Württemberg 峽谷的北部掘起，管理著封地內的三十多個村落和小鎮，其中的 Schwaigern 村內至今仍有隸屬家族的產業。家族在羅馬帝國時期更獲得貴族稱號。自 16 世紀起為奧地利皇家服務的幾個世紀間，該家族內先後出現了多位軍官與外交家，其中 Eberhard-Friedrich von Neipperg 與 Adam-Adalbert von Neipperg 在歷史上也留下了重要影響。而自十三世紀起，von Neipperg 家族就已開始釀酒，亦日漸成為家族的重心，到現在還管理著在 Württemberg 產區的 Weingut des Grafen Neipperg 酒莊。

雖然如此，不過 Stephan von Neipperg 一直都對酒沒興趣，反而沉醉於商業、政治和古典音樂。在 1971 年時他父親趁當時波爾多經濟低迷買入了 Canon La Gaffeliere，而因為 Stephan 操流利法文，所以他父親打算把酒莊交給 8 個兒子中的他。但其實當 Stephan 第一次知道要接那個酒莊的時候，其實他是拒絕的， 因為他覺得不能叫他接，就馬上接，第一，他要試一下。諷刺的是第一次試到時他還真是拒絕的，因為當時也是 Canon La Gaffeliere 的低迷期，長年的忽視加上化學肥料影響下的酒質完全提不起 Stephan 的興趣，他回憶時也說到要令他有決心回到學校攻讀他第三個學位，他必須自己也非常想這樣做。不過之後當其他兄弟姊妹都有各自崗位時，他答應了重新考慮。

一直到了 1983 年時，他去到了 Canon La Gaffeliere 的酒窖中喝到了其較舊的 50 年代酒款，由其是剛好 30 年酒齡的 1953 Canon La Gaffeliere 時，這款令他感到興奮的酒令 Stephan 終於找到他的決心，也可能是 2 次的明顯分別，讓他看到當中的挑戰，也是他日後釀酒理念的種子。在 1985 年就舉家搬到了 Saint-Emilion 全力發展。

在 1991 年父親把另一間 Saint-Emilion 酒莊 Clos de l'Oratoire 都交給了他。在 1996 年當原本的酒窖總管離開後，他就找來現在雙劍合壁的拍檔 Stéphane Derenoncourt。當初 Derenoncourt 只是 Pavie-Macquin 的工人，長髮自學吉他的形象給人隨性甚至會吸毒的形象。他雖然連釀酒都是自學，但 Stephan 認為他完全知道風土的含意，他相信正因為他自學，他自己去尋找方法解決問題的能力更高，而除了知識，敏銳的觸覺也同樣重要。

就在同期他們就開始了 Stephan 父親的第 3 間 Saint-Emilion 酒莊 La Mondotte 的大計。在之前 Chateau La Mondotte 的酒質平平無奇，不過 Stephan 相信只要用更好的技術就能有所提升，原本想將其拼入 Canon La Gaffeliere，但遭到當局拒絕，相信這就令 Stephan 更加想證明酒莊和自己，加上 Derenoncourt 的反傳統之心，他們馬上建起新酒莊新設備，所有方向和工藝都更破格務求生產出最好的酒：一系列重種和改善葡萄比例不在話下，又會以 mass selection 令老藤最好的特色得以遺傳下去，晚收、低產、高度粹取、重桶。結果一出就得到了各界好評，酒價也直線飆升。因為其風格，而且 Stephan 因酒莊的小規模拿走了 Chateau 一字，La Mondotte 更被稱為車庫酒，不過 Stephan 卻堅持這晚熟的位置絕對是枝講求風土的酒，無論如何 Stephan von Neipperg 和 Stéphane Derenoncourt 2 位就從此奠定了新派的地位。

修讀了釀酒學的他雖是學院派出身，但之後一直研究使用新技術，你以為現代派的他會無所不用其極時，他卻偏好低干預，不會做得過份，帶回很多上一代的工藝，更可能就是因為最初喝到化學肥料影響下的 Canon La Gaffeliere，早在 2000 年已奉行有機 + 生物動力法回歸自然。

Derenoncourt 也因此聲名大噪，甚至在國際間都有很多酒莊找上門，所以他很快就離開了酒莊開設了自己的顧問公司，不過到現在他也跟 Stephan 保持著客戶的關係。這位 Stephan 的最佳拍檔現在已是國際知名的飛行釀酒顧問，更被 Wine Spectator 稱為＂世界上最炙手可熱的釀酒師＂，一直協助著 Stephan von Neipperg 的各間酒莊。順帶一提，在 2009 年 La Mondotte 年斬下 Robert Parker 親評 100 分滿分的同時，同年波爾多 19 款滿分酒中，有 4 款都是 Derenoncourt 做顧問。

但如此革新的風格在傳統的 Saint-Emilion 當然會被爭論甚至討厭，不過 Stephan von Neipperg 談笑風生的性格一直助他悠然面對，反而在 1999 年在 Côtes de Castillon 打造他第 4 間波爾多酒莊 Château d'Aiguilhe 後，被那裡的人譽為救世主。"They say, 'You're the guy we've been waiting for'" Stephan 說道。

Castillon 是 Saint-Emilion 的衛星產區，從前都是出產比較平庸的酒，Stephan 把所有經驗和技術帶到這裡，大舉修復了破舊的城堡，重新種植了大部分葡萄園，翻新了所有設備建起了一座現代化的釀酒廠，出來的成品極速就得到各大酒評 90 分以上的亮麗評語。最後甚至令其他 Saint-Emilion 酒莊都仿傚來到此區發展，直接帶起了此區，由平平無奇變成了最好的衛星產區。這裡數百年質樸的環境和生活相對於 Saint-Emilion 的繁榮，深深觸動到衣冠楚楚，有著高貴頭銜，但卻純粹地注重風土的他。 "In all the wines I have, there's a lot of emotion, but in this one maybe more than the others" - Stephan。。加上這種成功帶來的情感令 d'Aiguilhe 慢慢成為他最愛的酒莊。

Stephan von Neipperg

Established in the 12th century in Germany's northern Württemberg Valley, the von Neipperg earldom comprised some thirty villages and market towns, including Schwaigern, which remains the family seat to this day.

Ennobled during the Holy Roman Empire, the von Neipperg family served the imperial family of Austria starting in the 16th century, contributing officers and diplomats for many years. Two figures stand out: Count Eberhard-Friedrich von Neipperg and Count Adam-Adalbert von Neipperg.

The family has made wine in Germany since the 13th century, and viticulture has never stopped being a central part of their life. The custodian of some 800 years of winegrowing tradition, the talented Stephan von Neipperg manages the Bordeaux estates acquired by his family in 1971. Ably assisted by a team of professionals, he has brought the wines from these châteaux to the pinnacle of quality.  

Residing in Saint-Emilion since 1983, Stephan von Neipperg and his wife, Sigweis, have devoted themselves tirelessly to perpetuating the family tradition at their various estates. The next generation is committed to this same goal... and shares a profound respect for the terroir.

Starting in the 1990s, the oldest vines in the von Neipperg vineyards have been propagated by mass selection to preserve a high-quality genetic heritage and guarantee total independence when replanting. This is a major effort on behalf of future generations.

Vignobles Comtes von Neipperg's various terroirs form a veritable patchwork. A detailed study has made it possible to adapt viticultural practices to each one and reflect its personality in the wine.

Dating from 1988, this deep ecological commitment is constantly revised and updated to enhance the environment and biodiversity. Many years of effort culminated in obtaining in organic certification for Château Canon La Gaffelière and La Mondotte in 2014. In addition, both estates are now ISO 14001 certified.
