關於天才瘋狂釀酒師 Bibi Graetz

畢比格雷茲 (Bibi Graetz) 是一位充滿了藝術氣息的釀酒師，他的葡萄酒充滿令人意想不到的童趣和想像空間。Bibi Graetz 成長於意大利 Florence 北方的 Fiesole 山丘。雖然父母有著葡萄園，但他卻是熱衷於藝術，直到 90 年代，Bibi Graetz 才走上釀酒之路。他自始追尋托斯卡納 (Toscana) 的地方品種的可能性，藝術家的狂熱氣息，從他的酒款名稱及酒標，就可知其一二。

也是這樣的洞察力才讓他揭發了Fiesole內Vincigliata區的潛力，這個多年沈寂的地區有著適合葡萄成長的泥灰土、富含鹽分以及水分使葡萄酒擁有完美的平衡。在頂尖釀酒顧問 Alberto Antonini 協助下，Bibi Graetz 在 2000 年成立了他的酒莊。成名大作 Testamatta 將 Sangiovese 的力道發揮極致。

成績數度高掛於 Wine Spectator / Wine Advocate 的排行榜，確立了其膜拜酒的地位，2010 年份 James Suckling 拿下了 98 分， 2015年份更是榮獲 99 分近乎完美的葡萄酒，可見此酒莊並非屬於曇花一現的流行。

Bibi Graetz曾在《神之水滴》中出現！這個被《神之水滴》所力薦的名莊，只專注於托斯卡納本地葡萄的釀造，風格卻是國際派 — 擺脫意大利給人既有偏酸的印象，反而是濃郁甜美、熱情奔放、同時兼具細緻細節。酒莊旗艦酒款Colore曾躋身Wine-Searcher網站意大利最貴的十大葡萄酒榜單之列！

從未讀過葡萄酒釀造和種植學，也從未受過相關的專業教育，憑著個人對大自然的敏感度以及高度的創作力和想像力，堅持使用托斯卡納的原生品種，將義大利葡萄酒帶入新境界。知名漫畫《神之水滴》不只一次提到這個酒莊，並且還針對畢比格雷茲這樣一個藝術型的釀酒師進行專題報導，畢比格雷茲有的不僅僅是創意更是對於釀酒的細膩度。

COLORE

IGT Toscana rosso

Colore is the highest expression of Bibi Graetz dream, from very old vineyards of Sangiovese. Poor soils mixed with sand and stone and high altitude create the perfect terroir for a wine that tells a lot about Tuscany and its ancient taste. Only the best few barrels of the whole production will become Colore.

TESTAMATTA

IGT Toscana rosso

“Testamatta” - “crazy-head” in Italian - is the best word to describe Bibi Graetz: a positive, creative and passionate person. Testamatta wine expresses the purity, minerality and transparency of Sangiovese from old vines on the top of the hills characterized by soils rich of stones. A Supertuscan made with 100% Sangiovese, result of the combination of tradition and creativity.

COLORE BIANCO

IGT Toscana Bianco

Colore Bianco comes from an old vineyard overlooking the sea, where the wind, the sun and the salt break the granite rocks to create sandy soils where the Ansonica variety has been grown for centuries.

TESTAMATTA BIANCO

Bibi Graetz spent on Giglio Island his childhood where he experienced the unique viticulture of the island. Testamatta Bianco was born thanks to the stories and knowledge the old farmers told him every morning while going to the vineyards together with their donkeys.

CASAMATTA ROSSO

Casamatta Rosso reflects the freshness, transparency and strength of the red fruit of Sangiovese variety. Entirely vinified in steel in order to preserve its vibrant and playful character.

BOLLAMATTA

Brut Rosé

Bollamatta is a charmat method made with Sangiovese coming from the best vineyards, the same used for Testamatta and Colore. Green harvesting to realize an immediate, fun and pleasant sparkling wine which is the result of great terroir and creativity.
