Champagne Ayala成立於1860年，是其創始人的願景，以及幾代人維持的對品質和創新的承諾的見證。在香檳著名村莊Ay的心臟地帶，自創立之初，Ayala就以創新和品質而著稱。1865年，在創立五年後，Ayala做出了一個大膽的舉動，使其在香檳界與眾不同。在當時，香檳的典型用糖量超過150克每升，而Ayala則推出了一款“Brut乾型香檳”，每升僅含21克糖。這一先驅步驟彰顯了酒莊對純粹和優雅的承諾。 自此，酒莊的聲譽迅速增長。1882年，Ayala成為1882年香檳品聯合會的創始成員之一，鞏固了它在精英香檳生產商中的地位。20世紀初，Ayala達到了新的高峰，1908年獲得了英王愛德華七世的皇家授權認證。

此白中白年份香檳，只在優秀年份釀造，精選香檳區白丘(Cote des Blancs) 2塊Grand Cru及3塊Premier Cru的霞多麗 (Chardonnay)，此白丘區為香檳區最優質的Chardonnay產地。此酒經過六年的瓶中二次發酵，後添加低量補液再推出市場。

品試報告:

明亮的淡黃色中透著金色光芒，隔著杯子就能看到一顆顆微小的氣泡。散發著柚子、白色水果、萊姆樹、雞蛋花交織而成，精緻卻又濃郁的香氣。若細細感受，還能聞到一絲鳳梨和薑的味道。剛入口時，火龍果、柑橘、成熟白色水果的香甜撲來，絲滑的結構，明亮又充滿活力。隱約還能嚐到洋槐蜂蜜的風味，帶來天鵝絨般的感受。尾韻悠長，帶著這個產區著名的礦物風味，以苦甜平衡的味道結尾。

This blanc de blancs shows an excellent balance between citrus, stone fruit and chalky minerality. Yeasty, creamy in texture, with excellent freshness, fine bubbles and a dry finish. 5g/L dosage.

Disgorged in November 2018, Ayala's 2013 Brut Blanc de Blancs offers up an elegant bouquet of lemon oil, English walnuts, crisp yellow apples, linden blossom and hints of praline to come with bottle age. On the palate, it's medium to full-bodied, deep and concentrated, with racy acids, a delicate mousse and a fine-boned, elegant profile. Concluding with a long and nicely defined finish, this vibrant and intense wine is one of the finest wines Ayala has released for some time.
