Bollinger 一直是最知名的香檳大牌之一，1884 年開始被英女王維多利亞選為皇室御用的香檳，在 24 部 007 James Bond 電影中以各種形式出現高達 17 次後，一直是英國人甚至是全球的優雅與力量的香檳代表。旗艦酒款 Françaises cuvée 更曾獲最知名酒評之一的 Wine Advocate 給予 100 分滿分。
而 Bollinger 的酒款風格正正跟英女王和 007 帶出的形象一樣，正是以 Pinot Noir 主導，追求力量、酒體、複雜度，同時保持優雅的風格。
Bollinger 始於 1829 年，多年來 Bollinger 都致力購入最好的葡萄田，現在 180 公頃的葡萄園有約 85% 都是 Grand Cru 或 Premier Cru！分佈於 7 塊葡萄園，分別種植 Pinot Noir 的 Aÿ，Avenay，Tauxières，Louvois， Verzenay，和在 Côte des Blancs 種植 Chardonnay 的 Cuis 和在 Vallée de la Marne 種植 Meunier 的 Champvoisy。
Bollinger 另一大特別之處是有 2 塊 未受過 Phylloxera 根瘤蚜感染的葡萄園 Clos Saint-Jacques 和 Chaudes Terres，這些未經嫁接的老藤全經人手採收，更是用上 Provignage／marquettage 這種 layering 的種植法，直接以最傳統將樹枝埋在泥土上種新樹，能夠一直將這些老藤的質素傳承下去，去生產特別的 Vieilles Vignes Françaises cuvée。
Bollinger 也是少有維持以木桶發酵的香檳酒莊，雖然戰後大部份香檳莊都轉用更好監控的不鏽鋼桶，但 Bollinger 同時堅持尊重傳統，即使是基礎的 Special Cuvee 都仍會保持至少 10% 酒經木桶發酵，因為木桶可以柔化單寧，對以紅葡萄為主風格的 Bollinger 是重要因素，而且也更好控制酸度，木桶小孔導致的緩慢氧化也可以增加複雜度。所以 Bollinger 現時是擁有最多木桶，也是最後擁有自家桶匠的香檳酒莊。木桶用上舊 Burgundy 的 Chardonnay 桶，令木桶的影響更細膩圓潤。
Bollinger 也是獨有以 Magnum 1500ml 酒瓶去陳存 Reserve wine 的香檳莊，這傳統更可追溯到 1892 年，令酒可以穩定不變地被釀酒師隨時選用，每年 Bollinger 都會將部份最好的酒保留作 Reserve wine，高達 100 萬瓶 Magnum 的 Reserve wine 可為不同酒款貢獻爆炸性的風味和複雜度，同時又優確細膩。
這款 Special Cuvee 是 Bollinger 的基礎酒款，也的確是最特別和最經典之一，跟酒莊的種植比例一致用上超過 85% 的 Grand Crus 和 Premier crus 葡萄，也是用上 60% Pinot Noir，25% Chardonnay 和 15% Meunier。每個批次都至少用上 10% Reserve wine，通常約 10% 在木桶發酵，瓶中 on lees 陳熟的時長是法規的兩倍，7-8g 的剩糖同樣是最典型的香檳風格。

7 Jul, 2023 – Lovely density and a fine-bubble texture. Dried apple and apricot with hints of dried flowers. Medium to full body. with medium-rich fruit. Spice, zest and ginger character. Usually 10% in barrel. 60% pinot noir, 25% chardonnay and 15% pinot meunier. About 40% reserve wine kept in magnums. Always really well done. Drink now.

Like its rosé counterpart, the latest release of Bollinger's NV Brut Special Cuvée is showing especially well, bursting from the glass with aromas of honeyed apples, crisp stone fruit, buttery pastry, ripe lemons and fresh walnuts. Medium to full-bodied, fleshy and vinous, with a deep core of beautifully ripe fruit, racy acids and a pillowy mousse, it's a charming, characterful wine that proves that Special Cuvée is firmly back where it belongs.
