Over the generations, this renowned Champagne house has been acquired by several major groups, including Martini & Rossi, Moët - Hennessy Group and S. A. M. E. The winery currently produces around 3 million bottles a year and uses stainless steel barrels for primary fermentation in the traditional chalk cellar, although smaller oak barrels are used when the winemaker feels it is necessary to add rich vanilla and cream flavors.

Winemaking
Today, Charles de Cazanove boasts state-of-the-art winemaking equipment and technology, producing over three million bottles of champagne annually. Grapes are primarily fermented in stainless steel vats. However, oak barrels are sometimes used to enhance the flavor and richness of the champagne.
