【酒莊温故知新】

Wine Couple 早前引入的智利有機酒莊，是南美洲第一間行生物動力法的酒莊。崇尚自然是他們的核心價值！從栽種到釀造過程，把人為介入的因素降到最低，不用化學藥劑除草殺蟲，捨棄化學肥料，採用天然酵母菌，在葡萄園裡大量種植香艷的花朵植物，果樹或藥草等分散蟲蟲們的注意力，更處處可見在園間漫步行走的動物的身影，甚至在釀酒控溫過程中控制碳排放量等 …. 這些高度回歸自然的葡萄園管理方式與釀酒哲學，蘊含他們尊重大地，與傾全力在環保上盡最大努力的一份心意。

【地理優勢】

Casablanca Valley 卡薩布蘭卡谷，是種植白葡萄及紅葡萄的重要山谷之一。其土地的成分和從太平洋海岸輕輕吹來的海風的影響，使葡萄緩慢地成熟，這反而能令葡萄容易產生芳香的香氣及精緻的味道。酒莊在這裏都種上長相思(Sauvignon Blanc)、霞多麗 (Chardonnay)、瓊瑤漿(Gewuztraminer)、維歐尼(Viognier)、瑪珊(Marsanne)、黑皮諾(Pinot Noir) 和西拉(Syrah)。

【關於酒款系列】

來自卡薩布蘭卡山谷最好的風土有機葡萄酒組合。每種葡萄酒都有一個代表卡薩布蘭卡山谷特色的符號，強化了葡萄酒、自然及其原產地之間的重要關係。

官方Tasting Note:

Of dark and deep purple color, this wineunfolds numerous aromatic layers as it opens up with air: forest fruits such asblueberries, blackberries, and black plums, spices, and smoky notes are part ofits essence. On the palate, we find flavors that remind us of graphite andlicorice. With an enveloping but lean mouth feeling, it offers a juicy acidity.

Very perfumed nose with some dark olives tothe black cherries, peppermint and wild herbs. A hint of violet. Quite brighton the palate with a saline note to the juicy fruit core. Tannins are tense andfine-grained. Tight and long. 3-4% viognier. 14 months in foudres.

The 2021 Syrah Signos de Origen from Casablancawas aged for up to 14 months in foudres and a quarter in concrete vats. Darkpurple in hue. The nose offers attractively clear, expressive notes ofraspberry, blackberry and pepper over a bed of sandalwood. Silky on the palatewith a terse, delicate feel, the bold finish lingers at length before fruity aftertaste.
