英國出產Sparkling Wine已有五六十年的歷史，雖然早期的出品根本不值一提，效果未如理想；慢慢發展致20世紀90年代中期，英國Sparkling Wine慢慢被人認識，吸引了一些重要生產商的投資，如Ridgeview和Nyetimber，出品開始標準化，葡萄種植品種亦起了變化: 各生產商都轉為種植香檳的葡萄品種——Chardonnay、Pinot Noir和Pinot Meunier，令生產出的Sparkling Wine與香檳越來越接近，有部份生產商的出品，甚至能與香檳媲美，現時英國有大概130多家釀酒廠生產葡萄酒，絕大部分的都是汽泡酒。

Gusbourne Estate(吉斯本莊園)是比較新的英國葡萄莊園，成立於2004年；酒莊分別於Kent(肯特郡)的Appledore(阿普爾多爾)有60公頃的葡萄園及West Sussex(西薩塞克斯郡)的Goodwood Estate(古德伍德) 30公頃的葡萄園。葡萄園種植著名的法國香檳專用的3款葡萄: Chardonnay(莎當妮), Pinot Noir(黑皮諾) 和Pinot Meunier(皮諾莫尼耶)。酒莊的首發年份為2016年；但酒莊於2010才公開推出市場，一推出市場便大獲好評，其後各大的比賽中，Gusbourne Estate的出品都屢獲殊榮。莊園更在 2013 年被授予 IWSC 年度英國葡萄酒生產商的美譽。

Gusbourne的理念是讓大自然成為嚮導，與土地合作，通過互補種植和可持續發展，實踐及鼓勵生物多樣性，在莊園之中，生機勃勃，本土植物、動物、鳥類隨處可見，相當於一個微型生態系統。

Tasting Note:

明亮的金黃色酒色，呈現紅色輕快的水果氣息，如車厘子，士多啤梨的香氣，隨後發展出點點的奶油蛋糕，出爐麵包的烘焙香氣，並帶有淡淡的肉桂和香料味。口感純淨清新，同時帶有柔和的堅果氣息，悠長而清新的餘味。搭配海鮮如扇貝、魚類，到口味較重的炸魚薯條，都迎刃有餘。

Tasting Note:

Bright gold in colour, this blend highlights red fruit aromas of cherry and strawberry, which then develop into attractive fresh pastry notes with a touch of cinnamon and spice. With a bright streak of citrus fruit, the palate is clean and fresh whilst giving tones of soft stone fruit and a long, refreshing finish. Enjoyed at L’Enclume, it is the flexible partner for contemporary and classic English food pairings; from seared scallops to smoked eels to fish and chips.
