Located in northern Burgundy, between Paris and Beaune, in the heart of Chablis, the Mosnier estate boasts a characteristic terroir and climate that allow us to produce unique and incomparable white wines. The characteristic minerality of Chablis Chardonnay wines derives their strength and delicate freshness from the Chimerician soils that emerged 70 million years ago when the sea receded. This sea left us with this incomparable soil: alternating layers of limestone and clay interspersed with marine fossils. In crafting our wines, we strive to respect the mineral freshness bestowed upon our Chardonnay by the union of our terroir.
Since 1893, driven by a passion for excellence and unwavering commitment, different family growers have supported each other for generations, each committed to cultivating vines and producing wines in an authentic, traditional, and genuine manner. This is how we create the unique Burgundy and Chablis. After many years of inheritance, Sylvain Mosnier, now represented by Stéphanie, blends traditional and modern techniques in production. The winery also keeps pace with the times, employing sustainable farming practices and even being labeled HVE 3: maximizing environmental protection and minimizing the use of chemicals, striving for a more natural vineyard environment to maintain its health and biodiversity.


Clay-Limestone-Kimmeridgian: Limestone soils with alternating layers of very dense limestone and very soft clay marl, containing marine fossils (tiny oysters called Exogyra virgula).


Mechanical harvesting. The juice is pneumatically pressed by gravity and lowered into temperature-controlled cement vats or stainless steel vats. It then ages on fine lees.
Light fining is performed in the spring to ensure protein stability. The wine is bottled in early May, under cool weather and with minimal filtration. Bottling is at the end of July.
