Domaine Jean Foillard 位於法國勃艮第南部著名的產區 Beaujolais（博若萊）中心地帶的特級村 Morgon，是和 Domaine Marcel Lapierre 齊名的傑出自然酒酒莊，莊主Jean Foillard 和已故的Marcel Lapierre是相當有志一同的好友，他們同是Jules Chauvet 理論的忠實擁護者，在80年代中期開始，常常聚在一起共同討論硏究如何釀造出忠於大地的真實美味，兩位都是自然葡萄酒的先驅者，十分受到景仰，對自然葡萄酒的影響極為深遠。

Jean Foillard出身於釀酒世家，他於1981年繼承其父親的酒莊，開展了屬於他自己的釀酒之路。他早年跟隨法國自然酒之父Jules Chauvet（1907－1989）學習釀酒，受到老師的啟蒙，Jean Foillard與另外三位同樣來自薄酒萊的酒農Marcel Lapierre、Jean-Paul Thévenet和Guy Breton成為了最早投入到法國酒自然酒運動的酒農之一。這個薄酒萊自然酒「四人幫」 提倡以最原始自然的方法來種植葡萄和釀酒，絕不使用人工肥料及農藥，選取晚收的老藤葡萄釀酒以賦予葡萄酒最佳的風味和複雜性，釀酒期間只添加少量或完全不添加Sulfur，對酒液亦不進行過濾或澄清，因此釀成的酒擁有極佳的複雜性，而且 「原汁原味」地反映薄酒萊真正的風土，令許多人從新認識薄酒萊這個充滿潛力的產區與Gamay葡萄真正的魅力。

Jean Foillard 酒莊目前約擁有約 11 公頃的葡萄園，其中最重要的是位於 Morgon 村最精之Cote du Py 中的葡萄園。如同 Marcel Lapierre 一樣，Jean Foillard 是採用有機種植，不使用化學肥料、農藥和除草劑，改以堆肥及獸力型田來替代，低產量，人工采手；在釀酒上，不加糖也不調整酸度，讓果皮和木槽中的天然酵母菌自然引起發酵，絕不使用工業培養酵母菌，所有過程減少並避免人為的介入。發酵的過程儘量只用踩皮而不用淋汁，完全不加二氧化硫。

Jean Foillard 以只使用包括向 Domaine de la Romanee- Conti 等酒莊買來的二手橡木桶中進行培醞，通常反覆使用長達十年以上，讓木桶達到陳釀酒質的效果卻完全不影響純淨的果味；最後不過濾也不澄清而裝瓶。Jean Foillard所釀的葡萄酒，自然卻不簡單，質地極其細緻優雅，不但可口美味且同時深度無比，自然派的種植與釀造，喝起來格外輕鬆無負擔。

Jean Foillard 身為 Morgon 這個特級村的頭號酒莊，最重要的 8.6 公項葡萄園都為在 Cote du Py 中。Cote du Py 可以說是 Morgon 最黃金的地段，有充足的日照，混和了來自生長於富含石英的片岩和花崗岩土壤之上、樹齡介於 10~90 年的 Gamay，純手工採收與挑選最佳果實，傳統的整串進行 3~4 周的發酵，於勃艮第舊木桶中陳釀 6~9 個月而成。

Racy wild strawberries and raspberries with white pepper, agave and dried herbs. Fresh, medium-bodied palate with silky, refined tannins spreading evenly across the palate. Juicy and bright finish with lovely, herbal allure. Extremely drinkable now, but will hold, too.

Foillard's 2020 Morgon Côte du Py bursts with aromas of peonies, orange rind, exotic spices and dark berries. Medium to full-bodied, fleshy and layered, it's deep and concentrated, with a rich core of fruit, tangy acids, powdery tannins and a long, sapid finish. Intensely flavored and incisive, at this early stage the 2020 looks to be one of the finest vintages of this cuvée in recent years.
