背景

Chateau de Beaucastel 是產區Chateauneuf-du-pape中名氣最大的酒莊之一，被Robert Parker 評為世界155個偉大酒莊之一、11個全球頂尖釀酒家族PFV- Premium Familiae Vini 聯盟會員之一。長年的高品質早已被各大酒評家認同，是隆河有機葡萄農(1950’s年)的先峰，在2001取得 Ecocert 認證，甚至也是生物動法的先驅。歷史可追溯至1549年：Beaucastel家族在此興建了Chateau de Beaucastel。1909年被 Pierre Tramier 收購後傳給其女婿Pierre Perrin再到 Jacques Perrin，其後 Jacques Perrin 在1974年開始使用生物動力法去營運酒莊，與當時的主流觀念背道而馳，現在看來Beaucastel的成就絕對少不了他當初的堅持。目前酒莊已經來到第五代的傳承，由 Jacques Perrin 的兒子 Jean-Pierre 和 Francois 接手，繼續承傳Beaucastel的傳統，靠著團結的家族理念，相互合作發揮所長；保留傳統特色，尊重自然與風土，將他們家族的釀酒理念和哲學融入他們的作品，為Beaucastel的酒液注入靈魂。

 

引用Robert Parker對Beaucastel的評價：one of the great winemaking families of France, are dedicated to producing high quality wines, preserving top terroirs, and to providing a range of wines in all price ranges that are as good as consumers can expect. Purchasing a wine from this family is about as close to a guarantee of authenticity and high quality as one can expect.

釀造

Beaucastel的葡萄全經人手工採摘，其後經過精細的挑選，只有品質最好的葡萄才會被保存用作釀造。其後會在恆溫的的大桶發酵15日，然後才會注入橡木桶進行陳釀。另外，13種葡萄品種會被分開釀造，每種葡萄都具備各自的特色，在不同的混釀中發揮自己的作用，為求調配出最完美的出品。混合的藝術是Beaucastel非常強調的釀造理念，這亦是其出品往往具備強大複雜度的原因。混合完成後，酒液會在木桶陳年一年，慢慢熟化，最後完成裝瓶後會繼續在酒莊中保存一年。而提到混釀就不得不提當中 Mourvedre （慕合懷特）這個品種，作為教皇新堡存在時便出現的古老品種，因為高難度的種植，很多酒莊都已經放棄種植，但Beaucastel依然堅持使用比例不少的 Mourvedre 用於釀造，造就了Beaucastel獨一無二的風味。

風土

全酒莊有130公頃，75公頃的屬於法定CNPD和大約25公頃屬 Cote du Rhone，其餘30公頃只種植一些普通農作物，等待種植新的葡萄樹，每年有1至2公頃會被犁土和重新種植、不強調橡木化，13種葡萄都是劃分開栽種，並分開照料，發展出獨特的個性。Beaucastel 所身處的地段氣候扮演著很重要的角色，低雨量、充足的日照、日夜顯著的溫差, 而覆蓋土壤表面的小圓石，相信是遠古時在山脈高處的石塊滙集而成的，這些小石塊能在日間吸收熱力，到晚間釋放到土壤，地方風系misral wind 使老樹保持乾燥和潔淨，而葡萄園土壤有層源於中世紀時代海底沙石，被阿爾卑斯山的沉積土覆蓋著，呈現土壤的多樣性。

哲學理念

Beaucastel擁有一套他們自己對葡萄酒的哲學理念，他們相信尊重風土，擁抱自然才是最好的做法，這樣可以使土壤更貼近原始的風味，利用生物動力法，使葡萄園形成自己的生態系統，用天然的方法增強葡萄藤的抵抗力。在Beaucastel的出品中木桶並不會是主要元素，反而是透過不同的葡萄品種反映最貼近自然的風味，藉此打造獨特、卓越、良好結構，同時優雅清新的組合風味。

不愧係Beaucastel嘅最高級的酒款

 

剛開瓶處於完全封閉的狀態，並沒有太多的風味，但即便如此都能夠充分感受到封閉的背後有著強大的複雜度；直到半小時後開始有輕微的紅果浮現，savory的風味、mushroom以及earthy、甘草的清香，入口衝擊感很強，full body，酒液包裹整個口腔，能感受到很強的結構，單寧非常柔和舒服，但卻存在感十足。

 

隨時間推演，幾乎6小時後，整體的香氣才開始釋放，成熟的紅莓，紅醋栗風味變得明顯，甘草糖、甜香料、紫羅蘭的花香等等，入口刺激感減低，整體變得更優雅隨和，但同時緊緻有力，可以預期絕對能有更多的變化出現，真的是複雜度滿分的作品。

 

無論是陳年潛力，複雜度，變化程度，風土呈現等等個方面，Chateau de Beaucastel都絕對是CDP產區的上乘之作，一試難忘。

Famille Perrin
